New publishing company foodservice
West Group is the nations leading publisher of legal documents. Their new campus employs over 5,000 people.
The objective of this project was to plan a foodservice designed to serve the printing press employee area as well as draw some employees from the overcrowded main cafeteria. Weekday noon business volume was expected to be 800 to 1,000 customer transactions. The project budget was very conservative for the amount of work to be accomplished.
The final result was a large serving area and a very small kitchen. It is based on the concept of designing most of the food assembly workcenters into the customer service area with only a small amount of hot food production in the kitchen. The cold sandwich, salad prep and dessert plating work are done in the serving area workcenters. There is a saute station next to the hot entree counter as well as a grill station and a pizza oven behind the Italian station. The "convenience store" style walk-in refrigerator in the serving area provides for added refrigeration and fast service, grab-and-go food merchandising.
