School district central production facility
Population served: 3000 student high school, two middle schools and ten elementary schools throughout the district

The food production center, located within the high school, serves the 3,000 student high school, two middle schools, and ten elementary schools. The high school dining room has 750 seats and operates four meal periods with 20 staff.

The facility was designed for hot food items to be sent to the satellites. To facilitate transfer of product from large mixer bottles to hot transport carts, a pump/fill station is utilized. Product can be pumped into bags or pans. The storage areas are accessible from the receiving area on one side and the production area on the other for efficient flow of incoming and outgoing products. The production area houses a large central bakery operation with roll-in rack oven.

The on-site serving area is designed to accommodate a variety of menu options. Several of these items, such as pizza, burgers and fries are prepared directly behind the serving lines. Centrally located between the lines is an A La Carté area which is open throughout the day.

Before/After: The previous high school was an open campus with a dining room seating 250 students. The new facility is a closed campus with dining seating for 750 and offerings which compares favorably with commercial foodservice facilities to which the students were accustomed. The new dining and serving areas are commercial in their appearance. The extensive menu offers something for everyone.
