New Business school foodservice

The Carlson School foodservice is the result of a master plan study we did for the University of Minnesota west bank campus. The west bank area had several small foodservice outlets that were unprofitable. The initial concept was for another small foodservice to serve students and faculty in the business school. We recommended that they build a larger facility that would serve as the primary retail and catering foodservice for this side of the campus. The concentrated foodservice volume would support more experienced and talented food management and culinary arts staff which would benefit both retail and catering customers as well as optimize financial performance.

The service area includes a specialty coffee, continental breakfast and bakery outlet that opens onto the building atrium. Exhibition cooking capability is designed into each of the three hot entree stations which provides for freshly prepared food and unlimited menu flexibility.

Our predictions have been validated. The Carlson School foodservice is a center of activity for the west bank campus. It serves 500 - 600 students and faculty at the weekday noon meal, as well as many evening student and catered events. Financially, it is the most successful foodservice at the University.
