New foodservice facilities
Historically, corporate buildings with 400 employees have not built self-contained foodservice facilities. However, more recently, businesses have placed greater emphasis on employee amenities. The Polaris Corporate Headquarters building planners wanted an employee foodservice that could do just about everything - on a small, affordable scale.
Senior managers had a great interest in their foodservice program. We took them on tours to similar facilities and helped them identify, evaluate and select a foodservice management provider.
The plan is an open kitchen - with screened warewashing and catering/cold prep work areas. The hot food production and service areas are part of the same workcenter. It includes an exhibition cooking station with a grill and charbroiler designed so the chef faces the customer. The salad bar station is designed with a cold food workcenter to allow a foodservice worker to make sandwiches, and plate cold food as well as operate the cash register during low-volume times.
The design theme, by HGA Architects, is based on the Polaris Victory motorcycle - a heavy-duty 50's style touring bike.
