THE PLANNING PROCESS

 
Successful foodservice facilities planning is accomplished by qualified professionals following a logical sequence of events and timely communication with the planning team. Our project managers guide you through this process from start to finish. We involve each interest group in the decisions important to them - from architects and engineers, to administrators, managers and cooks. Many projects are planned in worksessions with the architect and owner representatives. Each step of the process is reviewed before proceeding to the next level. We want our clients to be involved in planning and enthusiastically support plans they help develop.


 
PHASE I - PROGRAMMING AND SCHEMATIC DESIGN

Determine goals and objectives

Establish design criteria, customer and volume profile, menu format, service concepts, and cost parameters
•  
Identify and evaluate alternative production and service systems; compare space, capital costs and operating costs
•  
Develop schematic design options and preliminary equipment list
•  
Establish floor plan, project budget, schedule and construction phasing

PHASE II - DESIGN DEVELOPMENT

Select equipment; evaluate and incorporate usable existing equipment

•  
Develop an equipment list, plan, and descriptive equipment brochure
•  
Coordinate work with architectural, engineering and owner's representatives
•  
Prepare mechanical and electrical spot connection plans
•  
Facilitate health department review and approval

PHASE III - CONTRACT DOCUMENTS

Review and coordinate design details with project architect, engineers and owner representatives

•  
Prepare final equipment plan, schedule, fabricated equipment drawings and specifications
 
 

PHASE IV - BIDDING


•  


Prequalify bidders and provide list of bidders to client

•  
Respond to bidders' questions and substitution requests
•  

Evaluate bids and assist with contractor selection

 
PHASE V - REVIEW AND OBSERVATION

•  


Review equipment contractor's submittals - shop drawings, rough-in plans and equipment brochures

•  
Inspect equipment and installation; document contract deficiencies and required corrective action
•  
Assist owner representatives with resolving warranty problems
