New hospital kitchen & cafeteria

Mercy Medical Center (MMC), a part of Affinity Health System, Inc., is a new replacement hospital. The 5700 square foot kitchen will have the capability for staff to prepare meals for 90 patient trays, 60 day care meals, 100 home delivered meals and the 180 seat cafeteria. It is anticipated that there will be 450 employees and visitors that utilize the cafeteria over the noon meal service. The plans allow for the cafeteria to be operated with minimal staffing (1-2 employees) during low-volume service times, such as evenings and weekends.

There are several serving stations inside the 1750 square foot serving area, that will allow for a lot of menu flexibility and variety. At the grill guests may order an item such as a burger or chicken breast, and then proceed to serve themselves french fries and top their own sandwich with tomatoes, lettuce and onions from the topping bar. Pizza is available at the end of the counter. The hot food counter will display traditional comfort foods, including casseroles and other meat, potato and vegetable items. This station features display cooking for the Chef’s Special of the Day.

An island counter in the middle of the cafeteria has many self-service stations with a possibility of various food concepts. A salad bar and deli bar are offered on a daily basis. The specials bar can be set up to serve items such as baked potato with topping options, various pastas with different sauces, a Chinese buffet or even a top your own burrito, taco salad or fajita bar.

Other stations include a dessert and coffee area, cold beverages, snacks and ice cream novelties. Two cashiers are set up to ring customers through, one double sided the other single sided. One cashier station has access to a workstation so that the staff can prepare food items during non-peak hours for an efficient use of labor.
