For this project, we developed and presented several schemes to the Owner for an expanded buffet and seating area. The Owner approved an option that would increase the buffet seating and create an ethnic serving area concept within the boundaries of the existing buffet. The Owner approved the concept in early December and set an opening date in mid-April and required that the buffet remain open during the entire renovation. A set of coordinated construction documents were developed in cooperation with the Project Architect that included a multiple-phase renovation of the seating and serving areas. This allowed the project to be completed while keeping the buffet open with minimal lost seating.

The serving area design involved a complicated soffit/signage system which was coordinated with the kitchen exhaust hoods and the serving counters which were provided by the kitchen equipment contractor. The bases of the counter and counter locations were carefully coordinated with a complicated floor tile pattern. Wall finishes and openings for pass-through equipment were carefully coordinated between the architectural drawings and the foodservice drawings.

The completed buffet increased the number of seats in the dining room, improved customer flow through the serving area, increased the guests’ perception of value, and facilitated lower food costs by creating fewer stops in the buffet.
