New kitchen and cafeteria

The state capitol has been going through a series of projects to revive the building to its original heritage. The lower level dining area has a high vaulted ceiling surrounded by a catacomb of three foot thick walls, changing floor levels and small spaces. The dining room was restored to its original German rathskeller theme which had been painted over since World War I.

The result is an attractive and successful foodservice facility. In the same square footage of dining space, revenue is expected to more than triple.

Serving area stations include a deli counter with made-to-order cold sandwiches and a pannini grill; a soup/salad counter where large bulk salad bowls are used to display a variety of salads served in combination with soups; the hot food station features a 4-burner exhibition cooking range. A soda fountain, with a nod to the past menu and services, is open for afternoon ice cream specials.
