This club was originally established in 1883 as a home away from home for the leaders in the grain. lumber, shipping and real estate industries. When we were contacted in 2000 the club had become an important meeting place for the leading men and women in Duluth's new business economy. This new generation of members wanted the same menu variety and food quality they experience when they traveled around the nation and around the world.
This club offers banquet service any time of day and an a la carte menu for lunch and dinner six days a week. With banquet space for 250 and 325 seats in the a la carte dining the 50 year kitchen had managed to keep up through improvising and add refrigerated and freezer storage wherever space became available.
The kitchen was on the 2nd floor with the majority of the dining rooms but the primary storage was three levels below in the basement, connected only by stairs and a non-functioning dumbwaiter.
However, in order to meet the new expectations and increasing volume we needed to review all the areas available for food and beverage and organize them to meet current needs and allow for future flexibility.
One level below the kitchen, the ladies cloak room became a bakery and dry storage. The dishroom was moved out of the kitchen to an adjacent space to make room for a small walk-in refrigerator and freezer. The new freezers and refrigerator were added to the basement storage area, the storage shelving and finishes were changed to meet current codes and the dumbwaiter was repaired.
