This project included a renovation of the foodservice department to serve an existing 90 bed skilled nursing facility, as well as a new continuum of care addition. The new Assisted Living building houses up to 56 residents and there are 71 Congregate Living apartments.
The new building has a serving pantry that is uniquely positioned between the two dining rooms, one for Assited Living, the other for Independent Living residents. It includes an area for servers that allows them to pick up plated hot and cold food and access to the beverages and dish drop area, all without entering the food service area.
The window pick-up concept for the wait staff is open enough for residents to be a part of the foodservice experience, while keeping the institutional foodservice components in the "back of the house".
