Serves 1400 customers at breakfast and lunch when school is in session.
This project involved a kitchen and cafeteria serving area remodel of one of the highest volume retail operations on campus. Tight budget considerations and a short construction schedule offered challenges throughout the design process. Space limitations offered challenges for such a high volume space with a serving area of only 1300 sq. ft. The goal of the project was to to brighten the interiors to create a more inviting space an to update production equipment.
Kitchen work included cooking equipment replacement and reconfiguration of the dishwashing area. This reconfiguration captured much needed storage space.
The cafeteria serving area was completely updated from a gloomy and outdated space to a bright and exciting retail operation with new wall tile, soffits, ceiling, lighting and serving counters.
Eliminating multiple locations for grab and go beverages and snacks and consolidating them into a series of matching cases for cold food, snacks and baked goods created organization and facilitates faster service. A new deli-style hot food case displays an array of hot food items and soups. An updated grill line offers both made-to-order and self-service options as well as Chicago-style hot dogs.
Multiple stations for both hot and cold beverages were created to eliminate lines and speed service.
